How Sucré Began

Two MasterChef Canada competitors. One atelier.

Shane first competed on MasterChef Canada as a savoury cook, later returning for another season after being invited back into the competition process. It was during that return season that he met Sharon.

She competed directly behind him with a macaron tower that stopped the room while he presented a Salmon Mi Cuit. She went further in the competition that year. They became friends afterwards, discovered a shared interest in pastry and design, and eventually built Sucré together.

MasterChef Canada was not the beginning of Sucré as a business. It was the beginning of the partnership behind it.

Shane's background is in Systems and Computer Engineering, with a consulting career spanning Fortune 100 companies. He brings structure, process discipline, and a technical eye to how each commission is planned, built, and delivered.

Sharon is an MD and spinal cord specialist in Physiatry, trained at the University of Toronto. The precision required in medicine informs her approach to pastry: exacting, thoughtful, and deeply attentive to the person in front of her.

Together, they built Sucré as a private custom cake atelier in Toronto, focused on commissioned cakes rather than volume production. From the beginning, the goal was not to become a larger bakery. It was to create better work.

Our Philosophy

Sucré was built on a simple belief: exceptional cakes are commissioned, not mass produced.

Every design begins with context - the event, the guest count, the venue, the atmosphere of the room, and the people being celebrated. From there, each commission is developed with intention in both structure and presence.

We operate as a private atelier rather than a traditional storefront bakery.

This allows the studio to remain focused on a smaller number of custom cake commissions, each approached with greater precision, refinement, and care.

On ingredients: Sucré cakes are produced with premium European butter, Belgian couverture chocolate, carefully sourced fruit, and specialty finishing elements selected for flavour, stability, and presentation. Sugar flowers are crafted by hand from sugar paste by the Sucré team, built for proportion, realism, and visual balance.

We believe luxury is not only how a cake looks. It is how clearly the process is guided, how carefully the design is considered, how reliably the cake arrives, and how confidently it belongs in the room.

The goal is not volume. It is work we are proud to place our name on.

A Decade of Custom Cakes in Toronto

Since 2015, Sucré has created custom cakes for Toronto weddings, corporate events, private celebrations, and milestone moments. Over more than a decade, the atelier has grown in capability and reputation while remaining deliberately focused, consultation-led, and design-forward.

Each commission is evaluated for fit, timing, and creative alignment. We accept work selectively so that every cake can be planned and executed with the level of attention it deserves.

Notable commissions: Sucré has created custom cakes for private clients, public figures, touring artists, institutions, and film and television productions, including His Highness the Aga Khan V, Prince Amyn Aga Khan, former Toronto Mayor John Tory, and productions associated with Star Trek: Starfleet Academy and The Sound of Music. Corporate commissions have included Canadian Tire, Deloitte, Air Canada, Pegasystems, and leading Bay Street professional firms.

The Atelier Structure

Sucré functions as a true atelier built around specialisation. Each discipline is handled with intention, from calligraphy and fabrication to sugar flowers, sculpted detail, finishing, and flavour development.

Calligraphy & Lettering

Lettering is treated as a design discipline. Messages, initials, and monograms are executed through refined methods such as pressed fondant lettering or custom acrylic script approved before production.

Precision Fabrication

Laser-cut acrylic charms, monograms, and structural elements designed for accuracy, stability, and a polished final presentation.

Sugar Flowers

Botanically inspired sugar flowers crafted by hand from sugar paste, designed for realism, proportion, and balance within the overall cake composition.

Sculpted Fondant Detail

Hand-modelled characters, objects, and bespoke elements, quoted by scale, complexity, and the level of sculptural detail required.

Graphic Detail & Precision Prints

Graphic finishes using edible prints and fondant-backed sheets, precisely cut and placed for clean edges and intentional composition.

Pastry Craft

Sponge preparation, flavour development, and Italian meringue buttercream finishing delivered with the stability, texture, and refinement expected of a custom cake atelier.

Every element pictured - the sculpted sugar high-heel shoe, butterfly wings, individual sugar flowers, draped fondant pillow, and hand-formed rope tassels - was crafted as edible sugar work. Only the rectangular board beneath is not edible.

This piece was entered into the Icing Smiles cake decorating competition in November 2018 and awarded Silver. It reflects the level of sculpted detail and structural precision that continues to inform Sucré's commissioned work.

The Commissioning Process

Every Sucré cake begins with an evaluation of the brief, the event, and the fit. The studio accepts commissions based on availability, timing, and creative alignment, not simply because an inquiry was submitted.

When a design direction requires adjustment, we will say so clearly. Candour is part of the service. Our role is not only to produce a cake, but to guide the scale, finish, and visual effect so the final piece feels appropriate to the occasion.

  1. Inquiry Share your event date, guest count, venue, and inspiration images through the Sucré quote form. These details help us understand the scale, structure, and design direction required.
  2. Preliminary Guidance Sucré confirms availability and provides early direction on size, serving count, design complexity, and investment before the commission is refined.
  3. Design Refinement Finish, flavour, structure, and decorative detail are aligned to your event context through direct consultation. We guide the visual impact from there.
  4. Secure Your Date A nonrefundable 50% deposit confirms your production slot. The remaining balance is due 30 days before delivery. Weekend dates are limited and fill earliest between May and October.
